LAM'S ABALONE NOODLE
Having brought premium abalone into coffee shops in the 1989, Ah Lam created dishes such as the Abalone Noodle and Abalone Soup which were met with countless accolades. Back in the day, each bowl of noodle was paired with its own whole abalone and sold for $120 per bowl. What started out as a paring became Lam’s own signature Abalone Noodle dish. Over the years, the environmental sustainability of abalone in general was brought to question and customers were also no longer willing to pay $120 for a bowl of noodles at a coffee shop. Back in the mid 1990’s, in order to make Lam’s Abalone Noodle more accessible to the general public, Ah Lam came up with a more affordable version of the signature dish by using Premium King Top Shell, widely known as Abalone Top Shell, while maintaining its signature by preserving the special in house abalone sauce. Our signature noodle was henceforth known by our customers as Lam’s Abalone Noodle.
OUR PRODUCTS
At Lam’s kitchen, we accompany our customers in their daily quest for a more balanced and healthier lifestyle. We do so by creating simple recipes that respect and preserve the original flavors and nutrients of the ingredients we use.
Our poultry products are freshly delivered everyday and come from farms which are following high standard of management in the farming process and requirements in the respect of hygiene and security. The chickens are pampered in their poultry and have enough space to breathe and run and plenty of time to mature.
We use the best quality of soups with real pork bones to cook our noodles. Our sauces are all hand-made following Lam’s traditional recipes, with no preservatives added.
We work constantly with our suppliers on the improvement of our supply chain so that we can ensure quality and freshness for our ingredients from their production to their delivery, less wastage in our restaurants, competitive prices to keep our meal affordable to everyone and a better service to our customers.
